More than a few of those emails asked me for the recipe for the Ginger Cookies Jake talks about. Yeah, I included one of my most favorite sweet treats of the holidays in the story. How could I not when my mom used to go all out at Christmas time with cookies, fudge, divinity and the like? She was a very good cook but the holidays really showcased her amazing talents in the kitchen.
From our house to yours…Enjoy!
Soft Ginger Cookies
3/4 c. butter
1 c. packed brown sugar
1/4 c. molasses
2 1/4 c. all purpose flour
2 t. ground ginger
2 t. ground cinnamon
2 t. baking soda
1/2 t. salt
1/4 t. ground allspice
1/4 c. (approx) of white sugar
Red Hot candies
Preheat oven to 350 degrees F (175 degrees C)
Cream sugar into butter until a fluffy sugary mess.
Add egg and beat into butter mixture. I warn you, the mixture at this stage looks bad.
Do the same with the molasses and, yeah, the mixture looks even worse than it did before. But, it'll be good. I promise.
Sift flour with the ginger, cinnamon, baking soda, salt and allspice and work into the dark mixture in your bowl until fully incorporated or until your hand, wrist and arm feel like they're going to fall off.
Roll into 1 to 2 inch balls and dip into a plate spread with regular white sugar to coat.
Bake for 10 to 12 minutes.
Place a red hot candy right in the center when they've just started to cool.
